As a 14-year-old boy, Jan Albregtse signed on as a cook on ‘Cadzand 3’ in 1956. Such a young cook was expected to burn the stove to boil water for coffee and tea. He then had to make sandwiches for everyone on board. Then it was time to help scoop the catch into the crab sifter to separate the fish and crabs from the shrimp. Via the necessary detours, these shrimps were on the plates of the ‘Mesdames et Messieurs’ on the Paris terraces the next day, as a daily fresh delicacy from the North Sea.
